Q: Could this cake topper be used to decorate a wooden letter?

Depending on type/size of letter possibly. This item has a flat felt back and is not ideal for a cake. Most cake stores put an insert on the bottom of their product so it doesn’t fall over on top of your cake.

Q: Are the ears and horn attached as one piece, or are they three separate pieces? The pictures show both.

The horn, ears and flowers are one piece.

Q: Can this topper be put in the freezer if I made ice cream cake?

If you have space in the freezer for the 4 inches or so, I don’t see why not, it’s felt and fabric, cold won’t hurt it. However, I might recommend just waiting to insert it into the cake until you take the cake out of the freezer to serve. Usually with ice Cream cakes you take them out 10-15 minutes before serving so they thaw enough to cut them. That would thaw it enough to insert the topper no problem!
